Organic farming means a method of farming based on inputs of biological and mineral origin, which are not technologically processed and ensure lasting soil fertility and plant and animal health. The priority in this system is to ensure quality and not to maximise production.

Permanent grasslands play a special role in organic farming. They provide the cheapest, natural, complete fodder, which may be the only feed for cattle in summer; they are also an additional place for animals to run around, an essential element of their welfare in organic farming, and, above all, they maintain soil fertility through the use and effective circulation of nutrients within the holding, including the annual replenishment of potassium, phosphorus, and nitrogen.
